I love cooking for holidays. Not just major food holidays like Thanksgiving and Christmas, either. I try to center most holidays in our home around some big meal. St. Patrick’s Day is one of my favorite holidays to cook for. I try to change up my menu every year. We usually have some family or friends over, so it is one of the bigger holiday meals I cook. This year I cooked a traditional corned beef brisket with a twist. It was a big hit! I also made a huge batch of one of my favorite Irish side dishes, colcannon. Slow Cooker Ginger Ale Corned Beef

Corned beef brisket with great flavor and a subtle sweetness!

Ingredients

  • 1 Corned beef brisket with spice packet Approximately 3 pounds
  • 2 Medium white onions
  • 4 Medium carrots
  • 1 liter Ginger ale

Instructions

  • Place the brisket in the slow cooker with the spice packet contents.
  • Quarter the onions and chop the carrots into large pieces and place them in the slow cooker.
  • Cover all ingredients with the ginger ale.
  • Cook on low for 8 hours.
