I love cooking for holidays. Not just major food holidays like Thanksgiving and Christmas, either. I try to center most holidays in our home around some big meal. St. Patrick’s Day is one of my favorite holidays to cook for. I try to change up my menu every year. We usually have some family or friends over, so it is one of the bigger holiday meals I cook. This year I cooked a traditional corned beef brisket with a twist. It was a big hit! I also made a huge batch of one of my favorite Irish side dishes, colcannon.
